The story

A jar (酉) beside the right half of 譲, to hand over: picture rice slowly handing its sweetness to the yeast. 醸造 is brewing, 吟醸 on a sake label marks a premium brew, and 醸し出す is to give off a mood, like an old inn's calm.

Used in 醸造 (jouzou, brewing), 吟醸 (ginjou, premium sake), and 醸し出す (kamoshidasu, to create a mood)
